BARLEY BURGER STEW
This recipe with the ingredients was given to us a Christmas present from a church member last year. It is such a wonderful recipe for cold winter days. It is so easy too! I love it! Thanks, Teresa! Such a great idea!
l lb ground turkey or ground beef
1/2 c. onion or (dry onion)
12 -16 oz. tomato juice
14 oz. can chicken broth
14 oz. can diced tomatoes
15 oz. can Great Northern Beans
8 oz. can of corn
1/2 cup barley
2 tsps chili powder
1 tsp salt
1 tsp pepper
Brown meat and onion in a 4 qt. Dutch oven, and drain. Add tomato juice, chicken broth, diced tomatoes, and beans. Bring to a boil, reduce heat, cover, and simmer for 45 minutes. Add corn, barley, chili powder, salt, and pepper.Cover and continue over med. heat for 15 min. or until barley is tender. Add some water if stew is becoming too thick as the barley cooks.
