Gail's "Healthy" Cookies

Spelt Chocolate Chip Cookies

1/2 c butter softened
3/4 c raw sugar (I use only about 1/4 cup)
l egg or 1/4 c. Egg Substitute
1 Tsp. Vanilla Extract
1/2 Tsp. Baking Powder
13/4 c. Spelt Flour
1/2 Tsp. Sea salt
1/2 c choc. chips
1/2 c. chopped nuts

Preheat over to 350 degrees F. In large mixing bowl, beat butter, with sugar, egg and vanilla extract. Blend in flour, baking powder, and salt. Stir well. Fold in chocolate chips. Drop on oiled baking sheet by teaspoonfuls and bake at 10-12 min. or until done.

I was planning to take a picture to show these wonderful cookies, but before I could get a chance, they are all gone! Yes, I make them for me, because the ingredients are low glycemic, which is great for people who have to watch their blood sugar, as I do, but my family likes them as well. So I can't keep them unless I make cookies for them at the same time. At Christmas, of course, I do try to have a bunch of regular chocolate chip cookies.
